ranger cookies

We have a lot of favorite cookie recipes, but this one is one of the top three, compliments of my sister Saydi:
These puppies are packed with some pretty powerful tastiness, including coconut, rice crispies, and my always-favorite cookie ingredient: oatmeal.  Oh wait, maybe coconut is my favorite.  But this has both, so it's a win-win :)

It's definitely a blog-worthy recipe I realized, after someone asked in Lucy's birthday post (her requested "birthday cake"), so here we go:

1 c. (2 cubes) butter
1 c. brown sugar
1 c. sugar
2 eggs
1 tsp. vanilla

Mix together.  Then add:

2 c. flour (I use a tad bit less than this)
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. baking powder
2 c. oatmeal
1 c. coconut
1 c. chocolate chips
1/2 c. chopped nuts (walnuts or pecans...but these are optional and we never add them)

Mix together.

Then hand-mix in 2 c. Rice Crispies (so they don't get all smashed up)

Dough will be a little crumbly, and that's ok.  Place loosely on cookie sheet and bake at 350 for 7-10 minutes.

Also, if it's someone's birthday...especially if that "someone" thinks milk chocolate m&ms are the best thing to hit the earth, go ahead and throw those in too :)

  3. We have made these twice now! The first time we forgot to add the Rice Krispies but they still turned out delicious. In fact, I didn't even realize we left them out until I saw the box of Rice Kripies in our pantry later in the day. Ha! Oh, and this recipe makes a lot of cookies! 4 dozen, at least. Thanks for a great recipe!

  4. Can I omit the coconut? Althought I love it, my kids do not.
