banana oatmeal {and coconut if you want} pancakes

We've somehow ended up with a whole bunch of extra ripe bananas over the last few weeks.

I just keep buying them and I guess no one's in the mood to actually eat them.

So I've been looking up ways to use them.

I found a pancake recipe (here) that I modified to add my favorite ingredients.
These puppies passed the test of my family so here you go:

(I doubled this for our family.)

1 cup flour

1 tbs. sugar

2 tsp. baking powder

1/4 tsp. salt

1 egg

1 cup milk

2 tbs. canola oil

2 ripe bananas (mashed)

1/2 cup oatmeal (I like to use old fashioned...makes it more chunky)

shredded coconut (1/2 c. added to the mix or sprinkle some on the first side while cooking...I sprinkled)

Mix all together (batter will be a little lumpy) and cook on a hot griddle.

    Ah, and thanks for this recipe, it looks delicious! I found out that after moving to AZ one fruit that goes bad really quickly is banana, so I'm glad I found a way to use them up.

  2. If I have some bananas getting too ripe, I peel them and put them in a ziplock and mash them, then freeze them. Then I can pull out just the number I need to make banana bread or muffins since I rarely have six all ripe at once.

  5. I would recommend peeling and freezing rope/overripe bananas. You can then use them broken into smaller pieces in smoothies or my personal favorite is to make a banana "milk" shake with them. No ice cream involved. 1 cup milk, a splash of vanilla and 1 whole banana. It is the yummiest texture and thickness.

  8. These pancakes were delish, Shawni! Sent my girls off to school this morning with these in their tummies. Recently I made the Lion House honey butter, so I have to admit I slathered some on my banana coconut pancake. Wowsers.
