2 easy peasy ways to cook veggies

It's a little late in the day, but here I am to share two ways to cook veggies (inspired by blog readers from my post last week)....

Many readers have probably made these over an over and over again but I'm sharing anyway because it's always nice to get cooking ideas juiced up to think about stuff like this.

1)  Have your daughter chop up some vegetables.
(Ok or you, but I've found over the years that my kids are much more likely to gobble things down when they have something to do with the prep work.)

 Stir in olive oil, kosher salt and some garlic (to taste).
Are you wondering what those girls are doing in the background?

Oh, just your regular Sunday "bridge" game.
Yes, those are bare feet on the counter.

Sometimes you can't fight them so you just roll with the punches.

Have another daughter bake her famous flat bread to go with the veggies (recipe HERE).

And have your son grill the chicken because he offered to and you almost fell on the floor with joy and glee that he volunteered without even a job list to force him into it this time around.

This was a Sunday and the one (and only in my book) good thing about having our church time change to 8:00 a.m. is that we have time to cook together in the afternoons.

As a side note on that grilled chicken Max whipped up...our favorite grilled chicken recipe is back HERE.

Pour veggies onto a lined cookie sheet and spread them apart.
 Squeeze a little lemon over top.

Cook at 425 for about 20 minutes or until roasted while you finish up that flat bread.

Pull them out and enjoy.


2)  We used the exact same veggies for this so it might be a little bit confusing.  This recipe was from Mindy (thank you Mindy!!) and it is so darn easy and good.

All you do is put put chicken tenderloin pieces (mostly thawed) in a 9x13 casserole dish sprayed with non-stick cooking spray.

Top with veggies of your choice (she says her family loves potatoes but I already had these ready to go).
 See that semi-thawed chicken under there?
Pour over a couple tablespoons of melted butter, and one pkg. of Italian seasoning and cook (covered) at 350 for one hour.

Pull them out and watch your whole family devour them.
Soooooo easy!  

I have so many great recipes to share, just need to get my act together to make them and take pictures.

  2. You should try adding carrots.(If you don't already!) My family doesn't normally like cooked carrots, but they are SOOOO good cooked in the oven with other veggies. They get a sweet taste that is delicious!

  3. Looks good! Have you tried honey roasted carrots? Honey, olive oil, salt & pepper--roasted in the oven. So yummy!!!

  4. Try replacing pepper with white pepper. I got a great Italian cookbook recently, and they recommend white pepper on everything. I had never cooked with it before - it is delicious and changes the flavor slightly! And, you can still use regular black pepper for seasoning afterwards.

  5. Here is a chocolate chip recipe that has been in my family for 30 years. Thought I would share since you have shared so many great recipes.

    Chocolate Chip Banana Bread (Cake)


    1 3/4 Cups Sifted All Purpose Unbleached Flour
    2 Teasp Double Acting Baking Powder
    1/4 Teasp Baking Soda
    1/2 Teasp Salt
    1/3 Cup Melted Butter
    2/3 Cup Granulated Sugar
    2 Eggs Unbeaten
    1 Cup Ripe Bananas (3 bananas)
    1 Cup Milk Chocolate Chips

    Start heating oven to 350 F…and grease a 9” X 5” X 3” loaf pan.
    Mix flour, baking powder, baking soda, salt. Then mix in Chocolate Chips...put aside in a bowl.
    With electric mixer at medium speed thoroughly mix melted butter with sugar, then with 2 eggs until very light and fluffy. (About 4 mins) Then put in 3 ripe bananas and mix until smooth.

    Pour smoothie into flour mixture and mix by hand until well mixed.

    Pour entire mixture into pan.
    Bake 50 mins then test with toothpick until comes out clean. (Bake another 5 mins if needed.)Cool in pan for 10 mins then remove. (Serving warm is best.)

  6. I tried the flat bread (AWESOME) and then the second recipe with italian seasoning tonight. I thought it really lacked flavor. Maybe I'll try two packets ned time.

  8. I think for the second recipe you mean that dry Italian dressing mix rather than "Italian seasoning." I made that tonight, it was really delicious. Thanks so much for your recipes!
