zesty summer salad

Man oh man you have GOT to try this salad. It's my favorite to date. It's from my favorite recipe book called "Favorites." How's that for a lot of "favorites."

1/3 cup pecan pieces
2 tablespooons sugar

1/2 head green leaf lettuce, torn into pieces
1/2 head iceberg lettuce, torn into pieces
(I just omit the darn 1/2 stuff and use one head of romaine)
2 kiwis, peeled and sliced
1 cup strawberries, halved
1 avocado, chopped

1/3 cup vegetable oil
2 tablespoons sugar
zest and juice of 1 orange
zest and juice of 2 limes
(I cut this dressing recipe in half which is plenty!)

Carmelize pecans by mixing with sugar in small skillet over low heat until sugar melts. Spread on foil and cool, then break into pieces.

Combine dressing ingredients in a jar and shake well.

Toss salad ingredients together with pecan pieces, add dressing to coat and serve.

  1. I have this cookbook and it is my all-time favorite. I have made this one and have to agree, it is a favorite! In fact, it sounds good right now...I should make it for dinner.

  2. Hey Shawni - this is so funny that you posted this. I sat down to read a few blogs before making dinner and what do you think I was going to make?? A salad from this blog:

Sound familiar???? Too bad I didn't know about the kiwi. I'll have to try that next time :)

  3. It was so delicious when Elle and Isabel made it for us this summer! Thanks for the recipe. It is definitely a make again.

  4. mmmmmmm... this is definitely one of my favs. LOVe this salad so much if makes me so happy.

FYI: The Favorite's cookbook is my family. My Grandma was an Ivory sister and there are a lot of her personal recipes in there. Kinda fun that so many people love the book and I can call it a little bit of "me". Love that they put this book together so many can enjoy their talent. must be easier to get now because i know for a while you couldn't get it anywhere.

  5. yummy - I can't wait to try - It was good seeing ya today - wasn't it sooooo good! I was so uplifted today!
